“The mushrooms used here are button mushrooms. They are a good source of proteins, minerals, vitamins, amino acids and antioxidants. During the monsoon, make sure you don’t consume mushrooms raw in salads because they may have mild toxins and bacteria. Button mushroom should be firm, without decay or discolouration, whiter the better,” explains head chef, Malcolm Pereira.
