Can olive oil be used to prepare Indian food?

Olive oil is great for cooking. Extra virgin cold-pressed olive oil is best suited for salads. It also has a nice flavour, which blends really well with Indian cuisine. But, if you want to use this oil for deep frying, I would recommend that you don’t; other oils are better.

In fact, saturated fats may be better for frying. So, you really have to identify the medium of cooking and how different oils/fats lend itself.

Nowadays, because of the refining process, most of the original flavour is lost in any cooking medium, and it just blends into any flavour or spice that you add. So from that point of view, extra virgin cold-pressed olive oil is best suited for salads.
