Royal dessert for the win

A seven-layer lemon Swiss roll and amaretti trifle takes the cake for Queen Elizabeth’s platinum jubilee. Jemma Melvin, 31-year-old baker from Southport, a seaside town in northwest England, took the lead position with her dessert, competing against 5,000 entries ahead of the four-day event, which marks the queen’s 70th year on the throne in UK. Melvin said, “I found out that the Queen had lemon posset at her wedding, so I based the pudding around that flavour.”
