Ingredient­s

● 500gm boiled potato

● 7 tbsp corn flour

● 6tbsp rice flour

● ¾ tsp salt

● For Stuffing

● ½ cup dry grated coconut

● 1 tbsp almond flakes

● 1 tbsp chopped cashews

● 1 tbsp raisins

● 1 tsp ginger-green chilli paste ● 2 tsp poppy seeds

● 1 tsp coriander powder

● ½ tsp red chilli powder

● ½ tsp dry mango powder

● ½ tsp salt

● 1 tsp coriander chutney

Method ■ For the dough

Peel and boil the potatoes. Grate them with a thin grater and keep in a bowl. Now add rice flour, 4.5 tbsp corn flour and 3/4 tsp of salt to it. Knead a soft dough by mixing them well. Oil your hands then mash it further for a smoother dough.

■ For the stuffing

In a bowl take grated dry coconut, finely chopped almonds, cashew, raisins, ginger-green chilli paste, poppy seeds, coriander powder, red chilli, dry mango powder and salt. Mix them well. The add green chutney and sweet chutney. Mix them well, and stuffing is ready.

■ For assembling Khopra Patties Apply some cornflour in your hand and break the dough into balls of preferred size. Flatten out each ball and add two spoons of stuffing into each of these. Close the open ends and shape it into round balls using hands. Coat these patties in more cornflour and keep aside on a plate.

■ For frying the patties

Heat oil in a pan, on a medium-high flame. Put two patties at a time in the hot oil and deep-fry them. Keep pouring hot oil on them with a ladle. Fry them till they become golden brown. Serve them with sweet and spicy chutney and enjoy their taste.
