Quinoa is a pro­tein rich, high fi­bre grain, and due to th­ese prop­er­ties, it makes an ex­cel­lent choice as a snack.


60 gram reg­u­lar quinoa ¼ small cu­cum­ber ¼ small car­rot ½ eat­ing ap­ple 1 ripe to­mato 1 small hand­ful of baby spinach 1 fresh red chilli 2 sprigs fresh mint 1 lime 1 tbsp yo­ghurt 1 tsp hot chilli sauce


Cook the quinoa ac­cord­ing to packet in­struc­tions. Chop cu­cum­ber, car­rot, ap­ple and to­mato. Also chop the chilli, pick mint leaves and add spinach. Squeeze the lime juice and spoon over the yo­ghurt. Driz­zle over the chilli sauce, chop and mix ev­ery­thing to­gether so that the flavours all com­bine to­gether. Mix in the quinoa and sea­son to per­fec­tion.
