Get­ting yet an­other slice of Mum­bai to Pune is Arth, which also brings a gas­free restau­rant ex­pe­ri­ence to the city. Known for its in­te­ri­ors that have been de­signed by Gauri Khan and it’s gas-free kitchen that is led by Chef Amnin­der Sandhu, the sprawl­ing restau­rant has a glam­ourous dé­cor with flam­ing glass lamps and gold high­lights on black. The high­light is the en­tirely gas-free kitchen that uses only char­coal and wood. Sandhu has sourced in­gre­di­ents from cor­ners of the coun­try such as Ma­juli, Shil­long, Khonoma, Alleppey, Man­ga­lore, Gun­tur, Rishikesh and Kash­mir. She uses only cop­per uten­sils, a live sigri and a sand pit with live char­coal to slow cook meats.

RAISE A TOAST Mixol­o­gist Jeet Rana has his sig­na­ture cock­tails and the musthaves are the Phool- Tini, a flo­ral rhap­sody of el­der­flower, chamomile flower com­bined with gin and le­mon tinc­ture and the Hi­malayan Madh­pey which com­bines gin with bit­ter aper­i­tif and turmeric oleo sac­chrarum. n By Aditi Pai
