THE CHOCO­LATE FAC­TORY BY NEHMAT, JA­LAND­HAR For the love of food

Sood makes it clear that in­no­va­tive and healthy food is what she loves. A sum­mer choco­late mak­ing hobby course made her re­alise that there could be more to it. A BCom grad­u­ate from Apee­jay Col­lege of Fine Arts, Ja­land­har (2012), she un­der­took for­mal train­ing in 2013 from the Culi­nary and Cake Dec­o­rat­ing School in New Delhi, fol­low­ing it up with a course in 2015 from Polka Dots Cakes Academy, Mum­bai. The Choco­late Fac­tory by Nehmat was launched the same year.

Where there is a Will

Just the will to bake and ex­per­i­ment has helped Sood take on the num­ber of or­ders she gets. She re­cently had to cre­ate a sev­en­tier wed­ding cake, which seemed like a for­mi­da­ble task. “But if I don’t push my­self how will I learn?” she says. Sourc­ing in­gre­di­ents was ini­tially a hic­cup, but not any­more as mostly ev­ery­thing is avail­able in the city to­day.

The Vi­sion

While she wants to open a cafe even­tu­ally, her im­me­di­ate plan is to have a stu­dio space of her own and start tak­ing bak­ing classes too. Pre­fer­ring to do cakes with health­ier in­gre­di­ents in­clud­ing whole wheat, olive oil and brown sugar, she says, “Peo­ple are quite par­tic­u­lar about what stuff they buy. With or­ganic vegeta­bles and fruits al­ready a rage, this was bound to hap­pen.”
