Chef Regi Mathew, Augustine Kurian and John Paul started Kappa Chakka Kandhari (translates to tapioca, jackfruit and the kandhari chilli) to recreate the nostalgia of their mothers’ cooking. “It does Kerala food, but there is no malabar paratha and fish curry.
