200 gm ex­tra-firm tofu 1½ tbsp oil ½ tsp cumin seeds 1 medium onion, finely chopped ½ inch ginger, finely chopped 1 green chilli, finely chopped 1 large tomato, finely chopped A pinch of turmeric pow­der A pinch of red chilli pow­der ¼ tsp garam masala pow­der (op­tional) Salt to taste 1 tbsp fresh co­rian­der leaves, chopped


1. Crum­ble the tofu and keep aside in a bowl. 2. Heat oil in a non-stick pan. Add cumin seeds and when they turn brown, add onion and sauté till soft. 3. Add ginger and green chilli. Sauté for a few sec­onds. 4. Add tomato and sauté till soft. 5. Add turmeric, red chilli and garam masala pow­ders and mix. Add crum­bled tofu and mix well. Sauté for 3-4 min­utes. Sea­son with salt. 6. Add co­rian­der leaves and mix. Serve hot.
