Gastronomy on the molecular scale

Address : Molecule, SCO 53, 4th floor Sector 29, Gurgaon Meal for two: Rs 1,000 plus taxes Molecule Air Bar, a brainchild of Manish Sharma is located in Sector-29, Gurugram. The space is a great addition to the food and nightlife circuit in the Delhi-NCR region.

A restaurant offering molecular gastronomy is just one of the many USPs of the space. There are other exclusive elements to the restaurant as well which makes it a must visit hangout spot. The wooden chairs and couches are a throwback to the classic English bar that complement­s the dark wood decor. Brimming with elegance and class, the walls are adorned with 3D art installati­ons, iron installati­ons and artifacts inspired by war theme. Molecule is also known for its rooftop space that lets you enjoy your favourite delicacies in peace far from the hustle and bustle of the city. Microbrewe­ry, live music are the other high points of the restaurant.

We started our evening with hot and simple Rasam that was served with Sabudana Pappad.

We then moved on to Cheddar and Slow Roasted Chicken Tikka Kulcha that was served with four mini kulchas and butter chicken foam in a shot glass. The dish was both cheesy and scrumptiou­s. We followed it up with the Ghee Roast Soya Keema that was offered with four mini Malabar parathas hanging on hooks. Next item was Mutton Galouti Tacos; two tacos stuffed with lettuce, pudina mayo and mashed galouti. The delicacy is a must try for all the fitness freaks out there.

Another dish which we tried was Pav Bhaji Fondue that came with velvety smooth “fondue bhaaji” and giant-sized croutons toasted with butter. We dipped the croutons(a small piece of fried or toasted bread) in the bhaaji and thoroughly enjoyed the crunchy bite with the comforting taste of the bhaaji.

Because the place is best known to serve molecular food, one should definitely try it’s Molecular Puckha Shots which are five different flavoured waters that come in test tubes and liquid nitrogen to add to the drama, while the stuffing comes in a mini pressure cooker.One can also try Mediterran­ean Veg Thali, Mutton Kolhapuri Quesadilla, Black Pepper and Garam Masala Fish Tikka and clove smoke chicken tikka. The food at Molecule is a result of much research and tastings. The place serves home-infused liquor to offer a distinct flavour with distinguis­hed ingredient­s mixed in a perfect setting.

The pleasant evening came to an end with desserts. From an extensive menu of sweets, we gorged on Phirni brûlée with paan ice cream and Gulab Jamun Carpaccio Cheesecake. — Swati Singh
