Located on the border of Assagao and Anjuna in Goa, Edible Archives is run by Chef Anumitra Ghosh Dastidar and aims to create a “collective sensory catalogue that belongs to all the people involved in growing, sourcing, cooking, and eating a meal.” The restaurant has a unique cuisine-agnostic approach and is driven by ingredients, no matter how common.
