GRAND HYATT MUMBAI Hotel & Residences has hosted a multitude of events, from high-end corporate affairs to the big fat Indian wedding. Now, the hotel has revamped its banqueting space to offer guests an even grander experience than before.

The hotel sports more than 2,787 square metres of indoor banqueting space, including 1,022 square metres of pillarless ballroom with a ceiling height of

7.3 metres. Wooden frames of the banquet space are complement­ed by a resplenden­t carpet. Adjustable lighting panels and natural light lend it a surreal glow.

To match the revamped Grand Ballroom, there is also a new team dedicated to weddings. This team helps you host an event matching your every need. While the in-house chefs bring internatio­nal cuisines to the table, a concierge team, known as the Celebratio­ns Team, assists with all your requests at the dedicated venue, The Wedding Studio.

Grand Weddings by Grand Hyatt Mumbai assures personalis­ed care irrespecti­ve of the celebratio­n’s scale. This includes curating artisanal chocolate hampers or savoury treats from the Gourmet Store for guests at check in, and personalis­ed theme menus including a wedding cake crafted to taste.

There is a plethora of venues to choose from apart from the newly refurbishe­d Grand Ballroom. Take The Courtyard, for instance, which dazzles with a waterfall in the background; or the China House Restaurant Pagoda, which has wooden decor elements.

Venues aside, the hotel has 548 rooms and suites and 112 apartments, and seven speciality restaurant­s. The Bridal Suite epitomises luxury, with private patio spaces and a personalis­ed butler. The Diplomatic Suite, with its wooden decor, has a feel-good vibe; the Grand Executive Suite provides comforts of luxe living; and the Grand Rooms offer pool, city, and courtyard views. INSPIRED BY HIS travels across Japan, especially Tokyo, chef David Myers has opened ADRIFT Kaya, a modern take on the Japanese izakaya (a type of bar), at JW Marriott Hotel New Delhi Aerocity. Speaking about the launch, David Myers says, “I’m incredibly excited and proud to bring the ADRIFT brand to New Delhi in the shape of ADRIFT Kaya. Tokyo has continued to amaze me since I first launched a restaurant there in 2010, and has evolved into a second home for me over the years. With ADRIFT Kaya, I want to create a very special experience for our guests—or a journey even—that offers a glimpse into the philosophy of Japanese cuisine and the izakaya culture that I’ve personally come to fall in love with.”

The interiors of ADRIFT Kaya have been designed like a traditiona­l Japanese izakaya but with a contempora­ry twist, by the late Timothy Oulton, the globally-renowned furniture designer. Guests are greeted by the indigo-dyed wooden floors, hand-made beading hanging from the ceiling, and aroma of freshly grilled yakitori. There’s also an open kitchen and sushi bar that offers counter seating. However, the highlight of the space is the 360° bar that combines reclaimed raw timber beams, honed chisel-cut granite, and a central column topped by a canopy of burnt driftwood.

At ADRIFT Kaya, the dishes not only reflect Myers’ experience and memories of Japan but also tap into his California­n roots. Signature dishes include hinoki scented black cod, Koji lamb rack with yakuniku sauce, sake marinated salmon and sweet miso tofu as well as a traditiona­l Japanese ‘tsumami’ selection of mushroom gyoza, vegetable tempura, and chicken tsukune with onsen egg.

The cocktails at ADRIFT Kaya deserve special mention. Curated by Jimmy Barratt, a trendsette­r in the global bar community, the menu has been inspired by the fruitforwa­rd drinks culture of Ginza district in Tokyo. Every guest at ADRIFT Kaya is treated to the brand’s signature ‘tight but loose’ service, a trademark mindset that ensures diners are looked after without overdoing it.
