On 22nd March, Basque – Bar de Tapas played gra­cious host to two dis­tin­guished guests – the in­ter­na­tion­ally ac­claimed wine­maker Mar­qués de Ris­cal and In­done­sia's own wun­derkind culi­nary su­per­star Chef Man­dif M Warokka.

For only one night, guests en­joyed an en­chant­ing four-course din­ner spe­cially pre­pared by Chef Man­dif, with de­light­ful pair­ings by Mar­qués de Ris­cal wines.

The din­ner started off with a se­lec­tion of tan­ta­lis­ing amuse bouche – a scrump­tious prawn cro­quette de­light­fully pre­sented as a botan­i­cal won­der­land with a fresh oys­ter matched with a tangy and rich sauce served to the ac­com­pa­ni­ment of a de­light­ful Shervino's Mar­tini.

For the ap­pe­tiser, guests en­joyed brined poached tuna, served with per­fectly roasted veg­eta­bles on a toasted cia­batta, a su­perb dish of grilled oc­to­pus with gar­lic chips, pick­led red chilli bal­anced with ten­der cubes of sweet pota­toes and a pan-seared foie gras fin­ished with pome­gran­ate sauce. The light and flo­ral Mar­qués de Ris­cal Li­mousin 2013 matched the dishes won­der­fully. The mains in­cluded spiced Chilean sea bass, cooked to flaky per­fec­tion and served with grilled veg­eta­bles. The sea bass was paired with the fruity Mar­qués de Ris­cal Reserva 2011. Next came braised short ribs with a side of patatas bravas and salsa, paired with the bo­da­cious Mar­qués de Ris­cal Gran Reserva 2005 and the gor­geous Mar­qués de Ris­cal Baron de Chirel Reserva 2005 vin­tage. A de­lec­ta­ble dessert of Choco­late in Tex­ture was served to con­clude the ex­quis­ite wine din­ner.
