Gulai Ikan
INGREDIENTS
• 500g red snapper
• 20g red chilli
• 3g lime leaf
• 20g lemongrass
• 100g torch ginger
• 3g salt
• 3g sugar
• 100g red tomatoes
• 10g small leeks
• 50ml cooking oil
• 300g coconut milk
• 100g large red chilli
METHOD
1. Clean the fish thoroughly, ensuring the stomach is also washed well.
2. Cut the fish into 3 or 4 pieces and fry until semi-cooked.
3. Separately, fry the spices and blend until smooth.
4. Add coconut milk to spices and simmer.
5. Add the semi-cooked fish to the spices and simmer gently for 10 to 15 minutes.
6. Keeping the fish pieces whole, carefully move to a serving plate. Pour over the sauce and sprinkle with chopped fried shallots.
