By applying molecular gastronomy techniques, Indonesian dishes are reinterpreted as fine gourmet cuisine. A great example would be the Short Ribs Maranggi. Made for two persons, the dish features short ribs marinated for 48 hours in Maranggi sauce, complemented with grilled tape uli and Colo-colo dip. The Martabak Manis 1945, a Mille-feuille style sweet pancake, served with fermented black rice and coconut, meanwhile, offers an updated twist on a traditional Indonesian snack.
