1945 ( Jl.AsiaAfrika­No.8,FairmontJa­karta;+6221297033­33;fairmont.com/ jakarta), an upscale Indonesian restaurant offering authentic Indonesian flavors with modern interpreta­tions, recently introduced its new chef, Adhitia Julisiandi, who brings along his vast culinary expertise to recreate a new menu. By applying molecular gastronomy techniques, Indonesian dishes are reinterpre­ted as fine gourmet cuisine. A great example would be the Short Ribs Maranggi. Made for two persons, the dish features short ribs marinated for 48 hours in Maranggi sauce, complement­ed with grilled tape uli and Colo-colo dip. The Martabak Manis 1945, a Mille-feuille style sweet pancake, served with fermented black rice and coconut, meanwhile, offers an updated twist on a traditiona­l Indonesian snack.
