A testament to the exceptional craftmanship of Spice Islands Distilling Co., East Indies Gin takes inspiration from the splendor of Indonesia’s exotic plants. As an answer to the global emergence of craft gin, the country’s most-awarded distillery presented its creation, East Indies Archipelago Dry Gin in November 2021, handproduced in small batch.
Conceived in Bali, Spice Islands Distilling Co. is the first authentic craft distillery in Indonesia. Carrying a vision “raising Indonesian spirits”, the distillery is home to an array of high-caliber spirits that boast Indonesian rich flavors, crafted using a variety of botanicals. Master Distiller Mitch Hayhow is in charge of ensuring the balance of exotic ingredients such as torch ginger flower— known as kecombrang, lemon basil, Andaliman pepper, and Macedonian juniper of the best quality. Another secret behind each concoction, however, lies in a wonderful apparatus the brand takes pride in, a 550-liter copper still dubbed “Gede”, made by German company Carl known for its handmade stills for more than 150 years.
Before transformed into gin, the ingredients are first macerated and heated in the still. The heating process leads to the evaporation of the alcohol and botanical oil that carries alluring flavors. Through the column distillation process, the vapor is then condensed and concentrated, resulting in a smooth distillate. This final result is then diluted and bottled, presented as an exquisite blend that pampers our palate.
Enriching its repertoire, Spice Islands Distilling Co. recently presented its latest creation, the East Indies Bali Pomelo Pink Gin. Inspired by the magnificence of the archipelago, the gin is informed by its invigorating scent of Balinese pomelo, hence the name. Juniper berries are blended with ripe pomelo and fresh strawberries from Bedugul, as well as angelica root and coriander before being distilled to perfection.
The result is an aromatic dry pink gin that can be enjoyed in various ways.
