The Bijin Nabe is served with a range vegetables, meats and traditional ojyubako and paired with red pepper and garlic, green onion oil, yuzu pepper and chilli sauce.

The name bijin nabe translates to beauty hot pot, a direct reference to the numerous health benefits of collagen. The signature stock acquires its flavour and thick consistency from a process that takes over eight hours, in which the bones are stewed until totally dissolved and the stock resembles a smooth and silky pudding.
