Found en­sconced within the de­light­ful Wapa di Ume Re­sort & Spa, a stylish bou­tique re­sort just five min­utes from the cen­tre of Ubud, Mr. Wayan, Ba­li­nese Cui­sine serves only Ba­li­nese dishes and bev­er­ages. Helmed by Chef Gede Paskara Kar­ilo, Mr. Wayan, Ba­li­nese Cui­sine was cre­ated with just one core con­cept in mind; to cre­ate and of­fer au­then­tic Ba­li­nese flavours and tex­tures. “Ba­li­nese cui­sine is rich in flavour, herbs and spices. Here, we do not res­train our way of cook­ing to make it less spicy or dumb down the flavour. We cook our food whole- heart­edly, just like we cook at home,” the chef boldly states.

Mr. Wayan, Ba­li­nese Cui­sine is set amidst the iconic Ba­li­nese rice fields of Ubud and that rice plays a big role in the menu with clas­sic Ba­li­nese dishes like Nasi Gurih, a fra­grant dish with herbs and co­conut milk. Mains in­clude rar­i­ties like the lamb stew Ser­a­pah Kamb­ing and Lawar Kenus, sweet baby squid in grated co­conut and Ba­li­nese spices.
