A coun­try at­tuned to the rhythms of na­ture and its boun­ti­ful har­vest, Latvia cel­e­brates its Cen­te­nary with a show­case of their en­chant­ing cui­sine at Food&hote­la­sia2018.

Na­ture is at the heart of Latvia. From its beau­ti­ful forested land­scapes to pris­tine beaches, the Baltic Sea to its many rivers and lakes, na­ture and its chang­ing sea­sons pro­vide in­fi­nite in­spi­ra­tion for Lat­vians and Lat­vian cui­sine, where nat­u­ral and fresh pro­duce take cen­ter stage, boast­ing pu­rity and au­then­tic­ity. The Riga-gauja re­gion was named the Euro­pean Re­gion of Gas­tron­omy in 2017 and its cap­i­tal city, Riga, de­scribed as the Baltic Cap­i­tal of Gas­tron­omy. In a coun­try where old meets new, Lat­vian cui­sine has main­tained its links to na­ture while si­mul­ta­ne­ously pro­duc­ing in­no­va­tive con­tem­po­rary culi­nary cre­ations.

Cel­e­brat­ing their Cen­te­nary this year, Latvia makes its de­but at Food&hote­la­sia2018, show­cas­ing the coun­try’s rich culi­nary of­fer­ings at their na­tional pavil­ion. Once again, with na­ture at the core of the prod­ucts on dis­play, 10 com­pa­nies will be avail­able to re­flect the di­ver­sity of Latvia’s food in­dus­try.

High­light­ing that na­ture is key to au­then­tic pro­duc­tion pro­cesses, Mottra Caviar (mottra.lv), pur­veyor of ex­cep­tional caviar, uses only the purest, preser­va­tive-free arte­sian wa­ter as part of their tra­di­tional stur­geon farm­ing meth­ods. Sci­ence is also em­ployed for an en­vi­ron­men­tally con­scious ap­proach when har­vest­ing th­ese crys­tal, clean and pure caviar.

Nelleulla (nelleulla.com) from Riga, known as for­est choco­late, is in­spired by the pris­tine Lat­vian forests sur­round­ing the city. Flavoured us­ing berries ubiq­ui­tous in th­ese forests, from cran­ber­ries, red berries, black­cur­rant and blue­ber­ries to Nordic berries such as corn flower and sea buck­thorn, th­ese lux­u­ri­ous treats el­e­gantly re­flect na­ture’s wilder­ness.

En­joy slow-dried, nu­tri­tious, gluten-free and healthy snacks from Rāmkalni (ramkalni.com) and The Be­gin­nings (the­be­gin­nings.lv), which are burst­ing with vi­ta­mins and fi­bre. Crafted purely by Mother Na­ture and th­ese ar­ti­fi­cial flavour en­hancers-, preser­va­tives- and colourant- free snacks are in­spired by Lat­vian fields, gar­dens and farm pro­duce. Made from real fruits, veg­eta­bles, su­per-berries and nuts, they make sin-free snack­ing pos­si­ble.
