One of the most an­tic­i­pated restau­rant trans­for­ma­tions in the world of well­ness cui­sine this year, Emer­ald Room at Chiva-som re­turns with cui­sine di­rec­tor Pais­arn Cheewin­siriwa at the helm. While still awash in a vi­brant green (from which it got its name), the im­proved space sees a more open and con­tem­po­rary set­ting with Thai el­e­ments.

Cheewin­siriwa, who joined the group in 2003, in­te­grates his back­ground in Thai and Euro­pean cook­ing with an em­pha­sis on nu­tri­tion. Many of his im­mac­u­late dishes of­ten show­case pro­duce from the re­sort’s or­ganic gar­den as well as the plen­teous meats and seafood of the re­gion.
