New faces at the helm

Shaking up Manhattan Bar is Australian bar manager David Nguyen-luu. Before he unveils a new menu in February 2020, he’s made additions to the current one – especially in the gin department. Kryptonite ($25) is a modern gin & tonic, using clarified watermelon and Mancino Secco for a fuller flavour profile than expected. Gin, Mancino Secco Vermouth, peach liqueur and orange bitters, which changes in flavour when tasted separately with olive, fresh apple, and a lemon twist on the side. Jesse Vida, ATLAS’ new head bartender, has been hard at work on their latest new menu, Interbellu­m. Art Deco and the period between the two world wars inspired this opus of classic European cocktails with fine twists. Divided into five chapters, the cocktails draw from aspects such as the 1925 world fair held in Paris, the Zeppelin, and the discovery of King Tutankhamu­n. Aptly, The Boy King ($27) is a sherry and vermouth highball with a sharp and dry profile, topped with Champagne. R.E.M. ($25) derives ideas from Aldous Huxley’s futuristic literature, and is essentiall­y a Brandy Alexander to coax you into sweet dreams, thanks to Cognac, banana and raspberry liqueur, and whipped cream.
