”The food at Kin is all about heritage cuisine. With growing hunger for F&B knowledge and education across the globe we are seeing more restaurants in our region take pride in sharing their local roots, native ingredients, sub-cultures and traditions for today’s audience. I believe we can anticipate more attention from international gourmands on the Singapore culinary landscape and hope this cultivates a rising appreciation that inspires more local concepts and sub-cultures to take centre stage. I believe it’s important to rekindle past traditions and flavours for our guests. As my granddad taught me before he passed, learn and jot down as much information as possible from the different ethnicities that influence Eurasian cuisine before it’s too late. We must continue fighting to preserve and showcase our underappreciated and underrepresented culture.”
