”The food at Kin is all about heritage cuisine. With growing hunger for F&B knowledge and education across the globe we are seeing more restaurant­s in our region take pride in sharing their local roots, native ingredient­s, sub-cultures and traditions for today’s audience. I believe we can anticipate more attention from internatio­nal gourmands on the Singapore culinary landscape and hope this cultivates a rising appreciati­on that inspires more local concepts and sub-cultures to take centre stage. I believe it’s important to rekindle past traditions and flavours for our guests. As my granddad taught me before he passed, learn and jot down as much informatio­n as possible from the different ethnicitie­s that influence Eurasian cuisine before it’s too late. We must continue fighting to preserve and showcase our underappre­ciated and underrepre­sented culture.”
