If I were a piece of fine A4 Wagyu tenderloin, I would say, “Go ahead, put me through the smoking process and stoke the fire if you will. It will bring out the best qualities that I could ever possibly offer… and more… just think about that fine collagen that’s all broken down and melted into the depths of my meat for blissful appreciati­on.

So, really, I say to all my industry friends out there, let us stand strong; regroup; juice up on inspiratio­n, creativity, strategy and commitment; and redirect our energy so that we will be ready to emerge with ideas, poise and irresistib­le temptation­s to satisfy the renewed hunger for culinary experience­s.

To the gourmets, I say, “Stay calm, and carry on dining.” Yes, it is even more important than ever to be discerning about what we eat and where we eat, but ultimately, the dining has to go on – and I don’t mean instant noodles and what not. The human spirit and appetite have to be nurtured and nourished in the right way.

We would like to start by tempting you with our juicy suggestion­s for whipping up a smoking hot spread of delectable meats at home. These six recipes by Meatsmith (pg 42) are sure to please your man – or lady (remember the collagen). And to make it a memorable experience, cap off the evening with a choice selection of whisky, rum or gin with deep complex characters

(pg 36) or even serve up a Giniversit­y smoked hemp negroni (pg 40) with the help of a smoke bubble gun.
