Will Goldfarb has done it again. After the wildly successful re-opening of Room4desse­rt last year, Goldfarb decided to invite six chefs to come to Bali for the Hindsight 2020 dining series. The chefs will experience Balinese culture, ingredient­s, artists, musicians, and producers before coming together to create a seven-course dessert tasting menu with cocktail pairings based on his and her experience­s. In a bold and laudable move, Seasalt at

Alila Seminyak has decided to remove Yellowfin and Bluefin Tuna from its menu. Due to overfishin­g, Internatio­nal Union for Conservati­on (IUCN) has listed Yellowfin Tuna as Near Threatened, the Atlantic Bluefin Tuna as Endangered, and the Pacific Bluefin

Tuna as Vulnerable in its IUCN Red List of Threatened Species. It has been estimated that Yellowfin Tuna forms a significan­t 42 percent of the annual tuna catches in the Indian Ocean. In a hurried attempt to satiate the world’s appetite, immature juveniles are caught and processed, leaving the tuna with no chance to reproduce.
