Lead­ing in­ter­na­tional guest chefs from Miche­lin-starred restau­rants and Asia’s 50 Best Restau­rants have been mak­ing their way to The Din­ing Room since its un­veil­ing last Septem­ber. In­done­sia’s most tal­ented chefs have also been show­cas­ing their tal­ents and wow­ing guests from its ac­tion-packed open kitchen.

Jakarta’s epi­cure­ans have been treated to the amaz­ing Restau­rant Take Over se­ries from chef Thi­tid Tas­sanaka­john of Bangkok’s Le Du, chef Maxie Mil­lian of Bali’s Sangsaka, chef Mau­r­izio Bom­bini of Bali’s Mauri Restau­rant, and chef Richie

Lin of Taipei’s Mume. The Din­ing Room has also hosted chef Thomas Büh­ner of the three-miche­lin-stars La Vie in Ger­many and chef Julien Royer of Sin­ga­pore’s Odette (cur­rently ranked at 1 in Asia’s 50 Best Restau­rants and a re­cip­i­ent of three-miche­lin­stars in 2019) in mem­o­rable din­ing ex­pe­ri­ences.

With just 50 seat­ing, The Din­ing Room is ex­clu­sively built to sa­ti­ate dis­cern­ing ap­petites for world-class gas­tro­nomic ex­pe­ri­ences. Most re­cently, it hosted a sold-out Restau­rant Take Over with JAAN by Kirk West­away. Lo­cated on the high­est floor of Swis­sô­tel The Stam­ford in Sin­ga­pore, JAAN is spear­headed by chef Kirk West­away and show­cases his in­no­va­tive ap­proach in rein­vent­ing Bri­tish cui­sine shaped by sea­son­al­ity and ex­pertly sourced in­gre­di­ents. West­away’s culi­nary ap­proach has se­cured JAAN its one-miche­lin-star and its cur­rent rank at 32 in Asia’s 50 Best Restau­rants 2019.

Lucky guests of the evening were pam­pered with five-course tast­ing menu in­clud­ing JAAN’S sig­na­ture dish, Roast Potato & Leek Soup as well as Kin­medai, Car­rots, Saf­fron, Lan­gous­tine and Wy­larah Wagyu Short Rib, Potato, Mush­room Soy. “JAAN by Kirk West­away has al­ways been about be­ing veg­etable-for­ward. I grew up be­ing a veg­e­tar­ian and that has had a strong in­flu­ence on my culi­nary di­rec­tion, and what goes on the menu at the restau­rant. An ar­ray of veg­eta­bles is used in dif­fer­ent dishes and there is al­ways at least one sig­na­ture veg­etable dish each sea­son,” West­away shares.

Next, The Din­ing Room will host two out­stand­ing events: Sonoma County’s Ken­dall-jack­son Wine Din­ner and Restau­rant Takeover fea­tur­ing chef Jethro Vin­cent of Bali’s BIKINI.
