Pineapple infused mezcal

• 4 quarter-sized slices of fresh pineapple • 150ml mezcal }Combine ingredient­s in a sealed glass jar and store in cool dark place for 36 hours. Strain the results through a sieve or coffee filter and store for up to 2 months in the chiller.

PERFECT 10

• 2 lime slices • 2 lemon slices • 2 orange slices • 3 cucumber slices • 3 raspberry • 1 strawberry • 30ml pineapple-infused mezcal • 30ml passionfru­it purée • 20ml dark agave syrup • 50-100ml Dom Perignon Champagne • gold leaf, for garnish }Place all the fruit in a large shaker glass. Muddle fruit firmly to extract flavour. }Add the rest of the ingredient­s, except Champagne and garnish, and shake vigorously with ice. }Double strain into a chilled cocktail glass and top up with Champagne. }Garnish with gold leaf and choice of citrus wheel as preferred.
