The former pairs the sweet squash with a delectably chewy black barley and farro grain base, balanced with local aged black vinegar, wild honey, and sesame. The Hamachi in particular impresses with the right distribution of fat, resulting in moist flaky flesh that’s tempered by capers and burnt butter.
