The former pairs the sweet squash with a delectably chewy black barley and farro grain base, balanced with local aged black vinegar, wild honey, and sesame. Those looking to make small steps towards a more plant-based diet will definitely enjoy the seafood dishes of Hamachi ($29) and Mackerel ($27).

The Hamachi in particular impresses with the right distributi­on of fat, resulting in moist flaky flesh that’s tempered by capers and burnt butter.
