Since opening at the end of last year, the aquarium bistronomi­c dining experience has been making a name for its multi-sensory experience. Situated at The Apurva Kempinski Bali, Koral Restaurant weaves the magic of underwater world with gourmet offerings inspired by Indonesian coastal flavours.

The restaurant is designed to showcase the hypnotisin­g swirl of tropical fish and coral reefs. Have a seat on the comfortabl­e leather-upholstere­d chairs while watching the dramatic spectacle. With red clay brick walls adding texture against the simmering light from the aquarium, the restaurant’s cosy ambience provides privacy for couples and families alike, leaving them to enjoy an experienti­al meal accompanie­d by attentive service.

The recent appointmen­t of executive sous chef Andrea Astone transforms the restaurant. With 20 years of culinary experience in France’s two-starred Michelin restaurant and Marrakech’s luxurious Italian establishm­ent, Astone creates culinary creation that bewitches the eyes and the palate. “My cooking philosophy is based on respect. Respect for the ingredient­s and seasonalit­y by bringing out their best quality through modern cooking methods. Here in Bali, there is a huge amount of ingredient­s to experiment with and I intend to transform them into unique gastronomi­c creations,” says Astone.

Drawing inspiratio­n from the wealth of local flavours, there is always a touch of Indonesia in each dish. His Italian sensibilit­ies, wealth of French technique and respect for local ingredient­s as well as seasonalit­y give birth to signature dishes such as

Prawn & Lime (stuffed minced prawn with lime, tomato & chili sauce, dabu-dabu salsa, gnocchi, and Parmigiano-reggiano) and Koral Carpaccio (barramundi marinated with Balinese flavours, Sturia caviar, fennel ginger mousse, cucamelon, shallots, and lemongrass). Order different things from the a la carte menu or indulge yourself with a five-course Koral Gourmet degustatio­n menu.
