Starfish “Skipjack Tuna”
Skipjack Tuna is locally available in abundance, unlike Yellowfin Tuna and Bluefin Tuna. Seasalt decided to ban the use of Yellowfin and Bluefin Tuna due to overfishing and depleting stocks in the ocean. This dish is easy to make and relies on the freshness of the ingredient. To substitute, use sashimi grade mackerel.
