Black Charcoal Cracker

120g rice flour 60g potato starch 5g charcoal powder 15g salt 25g groundnuts, chopped 145ml ice water

Mix all of the ingredient­s until it turns into a fine batter.

Spread the batter on the side of the wok and baste it with hot oil until crispy.

Finely chop the skipjack tuna and place it in a bowl. Add in chopped spring onion, sesame seeds, shoyu, tomato ketchup, togarashi, and sesame oil. Mix all ingredient­s and shape it into a starfish shape. Serve it together with the black charcoal crackers. Garnish to your liking.
