Exquisite Taste

INGREDIENT­S PER PEARL:

5g blanched chopped long beans

5g blanched bean sprouts

5g blanched shredded white cabbage

5g blanched sweet corn

50g cooked sticky rice

Green peanut sauce

30g black breadcrumb­s (fine breadcrumb­s with squid ink) Beaten egg yolk

METHOD:

1. Purée cooked green peas with traditiona­l peanut sauce, season to taste. Set aside enough to use in plating.

2. Blanche vegetables, combine with green peanut sauce when cool.

3. Form a flat circle of sticky rice in the hand, spoon in 20g mixed vegetables and compress into a ball just smaller than a tennis ball.

4. Roll in egg yolk and coat in breadcrumb­s.
