The culinary team is led by the highly talented Chef de Cuisine Bayu Retno Timur and overseen by respected Executive Chef Maurizio Bombini, ensuring an unforgetta­ble culinary experience on each visit. Kubu presents Mediterran­ean-European-inspired dishes that are born from the freshest ingredient­s and the chef 's creativity and technical skill. Each dish is meticulous­ly created, guaranteed to evoke at the very least several oohs and ahs.

Open for dinner, Kubu's menu comprises an elegant à la carte section and bespoke degustatio­n menu, created to fit the diners' dietary needs and preference­s to a T. The à la carte menu consists of alluring appetisers, Mediterran­eanthemed entrées and the chef's collection items, including foie gras parfait with strawberry balsamic and hazelnut, Alaskan scallops with Jerusalem artichoke, black radish and kaffir lime jus, and wagyu beef rib eye with braised tongue, celeriac and truffle jus.
