Opened to great acclaim by chef-owner Maurizio Bombini and co-founder Luigi Amorotti, the restaurant offers an à la carte menu alongside a tasting menu, finely crafted cocktails and wines from Puglia in southern Italy.

Light and airy with a distinct Puglia feel, the restaurant seats just 40 downstairs, while a mezzanine level bar and lounge offers cocktails, wine and light bites. The bustling open kitchen is helmed by Maurizio, who follows his passion and heritage by using fresh, seasonal ingredient­s that have been locally sourced, some from as close as the rooftop hydroponic garden.

Guests looking for the most personal experience of this conscious cuisine can book the chef’s table alongside the kitchen, where they can enjoy a customised meal served directly by the chef. Maurizio is well known in Bali for his imaginativ­e and artistic flair, bringing together high-quality ingredient­s to create dishes that delight both the palate and the eyes.

As is typical of fine dining, a selection of amuse bouche offer a tantalisin­g glimpse of the pleasures to come and include the refreshing Orange Campari Spherifica­tion. Of particular note on the current menu is the 24-month aged Parmigiano cheese in home-made ravioli with a light, clear onion consommé, which is both hearty and offers layers of flavour. Meanwhile, a signature dessert is the Mauri-style tiramisu crafted at your table.
