Q: What are your responsibilities?

A: As the assistant director of the F&B department of a prestigious resort such as Sofitel Bali, I oversee the daily operation of in-room dining services for 415 rooms and the two prestigious restaurants that are well-known for their fine specialities and topquality service.

I assist the EAM F&B to manage operations and F&B administration, ensuring that all promotions and operational plans are well executed. I manage all daily F&B operations to the highest standards – all to maintain our excellent levels of internal and external customer service. I also analyse guest patterns and identify ways of improvement to increase their satisfaction.

Q: What makes a typical day?

A: As a Balinese Hindu, I start my day with prayers and gratitude to the universe, my family and forebearers. After clocking in at work, which is usually at around 7am, I get myself prepared by going through the latest reports and analyse any guest patterns and feedback from the preceding days or weeks. This also covers inventory, menus and costs. Then, according to schedule, I participate in morning briefings with the top resort management team or carry out morning briefings with my own team at the departmental level, to discuss any issues or plans for the day, the week, or any particular special events ahead that require significant focus and resources.

Q : Your best attribute?

A : I think I am a down-to-earth and flexible kind of guy – I’m able to adapt to situations as required and if I am given the responsibility such as the position I am in now, I can help my team to achieve shared goals.

Q: Team player or team leader?

A: Both, in whatever required situation.

Q : Who has been the most influential figure in your career to date?

A: Gordon Ramsay.

Q: Name one really special thing about your hotel or restaurant? A: Cucina, it’s home to one of the best brunches in the world!

Q : How do you unwind?

A: I love spending my free time with my wife and kid. They mean the world to me.
