Elevating the shabu shabu experience to the highest level, Shabu Shabu Gen – long famed in Singapore – pampers Jakarta’s gourmands with a beautiful venue of understate­d elegance and highly marbled wagyu beef from boutique cattle houses in Japan. The meticulous attention to detail starts with sourcing the ingredient­s, all of which are imported for a refined dining experience. The broth is a mild mixture of Japanese spices and a warming pepper that is carefully prepared over several hours as the perfect accompanim­ent. The finely sliced beef is some of the best to be found – Kagoshima A4 and A5, and Hida A5 and even the vegetables are imported.

Gently swished in the simmering broth, the melt in the mouth beef takes mere seconds to cook and is even better dipped in one of either the ponzu, citrusy yuzu or everpopula­r goma sauces.

For those who prefer something a little richer, Shabu Shabu Gen now serves sukiyaki with the same incredible wagyu beef. Cooked in a soy sauce-based broth in a hot pot, it is just as refined as the shabu shabu and is divine dipped in a little beaten egg just before you eat it.

The menu includes chawanmush­i, light salads, rice and noodles, as well as typically Japanese desserts, including the chef ’s own delicate warabi mochi for the perfect ending to a nourishing meal that warms the heart and soul.
