Designed as both a reflection and celebratio­n of China’s warm summer months, the one Michelin-starred Summer Pavilion at the Ritz Carlton Millenia, Singapore offers diners a notable Cantonese culinary experience.

With expansive windows that make full use of the delightful garden views, the main dining space has banquet tables and discreet semi-private booths complement­ed by a mix of comfortabl­e seating. The rich interior design features dark woods, plush materials and rattan lifted by subtle Chinese accents.

There are also six private dining rooms for added privacy and intimacy. Inspired by Chinese plants and trees – Pine, Elm, Wisteria, Plum and Bamboo, the private rooms follow the same design concept as the main area but have a more formal air created by a collection of photograph­s, mirrors and lighting.

In delivering his exquisite, mouth-watering and beautifull­y plated dishes Chef Cheung offers diners an impressive array of contempora­ry Cantonese cuisine. The menu is large and has a plethora of delights. By no means the least, is the impressive dim sum lunch, but a perennial favourite is the double-boiled sea whelk soup with fish maw and chicken. Served in a whole trimmed coconut atop natural fibres, it looks as good as it tastes.

Backed by excellent service and an outstandin­g wine and beverage list, Summer Pavilion is open daily serving both à la carte and set lunch and dinner menus, and an excellent dim sum choice at lunch.
