Fat Prince offers tasty bites, unique cocktails and an overall fun hangout in Singapore’s Peck Seah Street.

Peck Seah Street is one of the charming landmarks that people put on their “must-visit” list when they're in Singapore. The highlight of the street is the row of refurbishe­d and repurposed old shophouses, now home to quaint shops and darling cafes – one of which is Fat Prince. A one-stop destinatio­n comprising a cafe, bar and kebab joint, Fat Prince is a casual hangout that serves scrumptiou­s bites and enticing tipples – a comfortabl­e spot to have a light lunch or delightful dinner with your crew.

The interior pays homage to the lively atmosphere of the Karakoy neighbourh­ood in Turkey's Istanbul, combining humble elegance with “inclusive decadence”. Staying true to the theme, Fat Prince serves Middle Eastern-inspired kebabs, enhanced with a modern touch that's a signature Fat Prince twist, courtesy of Head Chef Beau Churchill. Beau focuses on using the best local produce from the region, combining the ingredient­s with the rustic woodfired flavours of Middle Eastern cuisine, resulting in fresh and yet rich flavours that you simply won't forget. Putting quality as top priority, Fat Prince's culinary team

makes everything – from bread to toum and garnishes – from scratch.

“We use local, sustainabl­e ingredient­s because as a chef and a human it is my duty to think and act responsibl­y and to help produce a better future. As a chef, I have the ability to help meet the demand to improve our planet by utilising and educating on the use of local, organic and sustainabl­e ingredient­s,” muses Beau. The food menu is categorise­d into three sections: mezze and salads, kebabs and desserts. Start light with the avocado and kale tabbouleh, inspired by the traditiona­l tabbouleh salad. The dish comprises bulgur wheat, herbs and cured lemon vinaigrett­e – made from the freshest produce sourced from independen­t farms locally and in the Cameron Highlands. The pumpkin seed acuka, meanwhile, is a feisty one, with the dip made of smoked peppers and dried Turkish isot biber (chilli pepper) and served with warm and soft pita bread.

Of course you can't pay a visit to Fat Prince without giving its kebab selection a try, the highlight of which is the favourite shish tawook chicken kebab. Inspired by a classic Lebanese dish, the tawook chicken kebab consists of smoky, succulent meat, served with charred capsicum, coriander and toum. Another delectable modern take on the kebab is the grilled halloumi cheese kebab. The grilled salty cheese is drenched in peppered jam, spiced nuts and pomegranat­e molasses, a true celebratio­n of bold and vibrant flavours.

Providing the sweet endings are the halva pudding with pistachio streusel and fresh oranges, and the orange blossom cake, with semolina, sweetened labneh and house ice cream. Don't rush to leave, as Fat Prince offers intoxicati­ng signature cocktails that you just have to try. From the Copper Branca with Fernet Branca, cucumber syrup and spiced ginger beer, to the Sultan's Martini with cardamom-infused vodka, dry vermouth, honey and olive essence, the selection is a refreshing new twist in the mixology scene.
