The all-day dining restaurant at Mandapa, a Ritz-Carlton Reserve, has a stunning selection of the nation's finest dishes cooked with passion by the culinary team under the leadership of Executive Sous Chef Bayu Retno Timur.

The dining experience is an elevated traditiona­l style that starts with handwashin­g with lime, pandan and lime leaf-infused water, followed by a stone bowl filled with lalapan – raw mixed vegetables – served with spicy sambal and accompanyi­ng local crackers to enjoy while perusing the menu.

The choices range the archipelag­o and the restaurant advises that guests choose a few dishes and share them family style for the most enjoyment. As befits a truly Indonesian meal, steamed rice is continuall­y available with a choice of either plain, red or coconut rice. Firm favourites on the menu include a fragrant oxtail soup, grilled river prawns, slow-cooked beef cheek rendang, spicy basil woku red snapper, bebek betutu and salted egg prawns.

The desserts take the traditiona­l flavours of much-loved family classics and raise them to the next level. The tape uli is based on fermented rice, while the es dawet nangka and cendol is based on

Sawah Terrace only uses natural ingredient­s so that we are able to create the authentic natural Indonesian flavours in every dish.

A selection of alcoholic and non-alcoholic cocktails incorporat­es the nation's herbs and fruit, with vodka, lemongrass, holy basil and passion fruit making up the Wantilan; gold tequila, lychee, mango and kaffir lime leaf in the Candra Surya; and lychee, strawberry, apple and ginger ale in the Eksotis Bedugul.

Set overlookin­g the rushing Ayung River and the resort's own organic garden, this is true dining with nature.
