Styled as a classicall­y elegant gentlemen's club from yesteryear, with a deep green, dark wood and leather décor, cool lighting and a billiard table, Apéritif Bar is the epitome of sophistica­tion.

Found alongside the renowned Apéritif Restaurant at Viceroy Bali and open to both in-house and outside guests, this is a venue where those who take their drinks seriously can socialise with like-minded drinkers while enjoying a game of pool, taking in views across Ubud's rainforest from the outdoor terrace, lounging in the deep armchairs or discussing the finer art of cocktail making with award-winning and passionate Balinese mixologist I Made Agus Borty Jessika and his team.

The cocktail programme itself was crafted by award-winning bartender Ran Van Ongevalle, who took his inspiratio­n from the Roaring Twenties, while bearing in mind Bali's tropical climate and the bar's aperitif-style concept, leading to unique twists on the early classics utilising the best artisanal spirits and in-house infusions.

Borty's creative and highly inventive nature has also leant his own personal touches to the drinks menu and he is more than happy to craft drinks that perfectly suit guests who are looking for a change from their usual tipple, based on their personal preference. Popular choices here include the signature Tamarillo Negroni crafted from Roku gin, Aperol and vermouth, with the addition of Bali's tamarillo fruit for some local flair, as well as the 1920s Celebrity, which blends eau de vie with Campari, maraschino, pineapple and red almond. The mockritifs, meanwhile, although designed for non-drinkers, are intriguing enough to tempt everyone.
