One of the star dishes at The Kelusa is the Betutu Cannelloni, merging Italian and Balinese comfort dishes of betutu chicken and cannelloni pasta, topped off with burnt mozzarella and chilli lemongrass vinaigrett­e. Another must-try, and quirky combinatio­n is the Tuna Sambal Matah, with penne pasta, spiced tuna and sambal matah.

For a more authentic selection of Indonesian fare, check out Cakalang Woku consisting of grilled tuna, spicy turmeric broth and tomato confit. Another local comfort dish on offer is

Kolak Pisang, a sweet dessert made of banana, spiced cranberry, staranise, chantilly cream and shortbread crouton.

The Kelusa also offers F&B experience­s to remember, such as Traditiona­l Balinese High Tea, served on a wooden dulang just like
