"The final touch to complete the Deep Ocean concept is the garnish, where we use a fresh under water ingredient, seaweed, but the extraordinar y thing here is the colour," explains LA MER's Head Bartender Kadek Agus Sudiartana (a.k.a Bagas). "The seaweed is soaked for a certain period using rosella syrup to get the food-grade red in it and give a bit of contrast to the light green from the drink 's colour."
Another fascinating cocktail to accompany your sunset viewing at LA MER's stylish open-air space is Berry Spritz, a refined adaptation from well-known classic international cocktail Aperol Spritz, and Spirit Cafecito, the bar's take on the classic Espresso Martini, and El Cafecito, made with LA MER's homemade cacao syrup and coffee liquor.
