In­tro­duc­ing tra­di­tional Pa­puan dishes in mod­ern ways from its Pakubu­wono lo­ca­tion, Papoea by Na­ture will be Jakar­tans’ new favourite hang­out with menus from the sta­ple papeda, or sago pulp, to the nu­triri­ous kuansu, or red fruit, and many oth­ers. Be­sides the clas­sic pair­ing of con­gee-like papeda with turmeric-sea­soned mack­erel soup, the sago pulp is also fried to an ad­dic­tive crispy­chewy tex­ture filled with smoked tuna and steamed with caramelised co­conut pieces for the cu­ri­ous unini­ti­ated.
