Tropicola Beach Club (+62 361 9343636) in Seminyak, Bali has welcomed two new chefs, Jimmy Garside and Joel Wootten, as part of its concept transformation this year. Executive Chef Garside is English. He previously worked in Australia at Jonathan Bathelmess’s Apollo group, The Unicorn in Paddington and Mary’s Underground in Sydney. Head Chef Wootten’s resume includes seven years at Neil Perry’s Rockpool Group. The duo focus on sustainable local produce, their motto being: “Minimal intervention to the plate and the planet”.
