Tropicola Beach Club (+62 361 9343636) in Seminyak, Bali has welcomed two new chefs, Jimmy Garside and Joel Wootten, as part of its concept transforma­tion this year. Executive Chef Garside is English. He previously worked in Australia at Jonathan Bathelmess’s Apollo group, The Unicorn in Paddington and Mary’s Undergroun­d in Sydney. Head Chef Wootten’s resume includes seven years at Neil Perry’s Rockpool Group. The duo focus on sustainabl­e local produce, their motto being: “Minimal interventi­on to the plate and the planet”.
