Having received the Ordre du Mérite Agricole or Order of Agricultur­al Merit from the French Republic, Chef Chris Salans decided to celebrate the best of French cuisine at his restaurant by presenting a series of exclusive dinners at Mozaic Restaurant Gastronomi­que (+62 361 975 768) in Ubud, Bali. Starting in October, one night every month Chris Salans prepare Mozaic’s all-time favourite dishes over the past 18 years. Mozaic is one of the first gastronomi­c restaurant in Bali when it was first opened in 2001 and, safe to say, a pioneer. Now, we are gifted the chance to explore that journey, from a little-known restaurant in the middle of rice paddies to the gastronomy icon it is today. There are two menus on offer: A six-course tasting menu and an eight-course tasting menu, with optional wine pairing at an additional charge. You can expect dishes such as Caesar Salad with Crispy SoftShell Crab, Grilled Prawn Gazpacho, Crispy Foie Gras in a Trio of Mango, Lamb with French Beans in Pistachio Dressing and, the venue’s all-time favourite, Chris Salan’s signature Potato Purée. Dinner reservatio­ns will be available from 6-9pm and seating is limited to 60 guests.
