WITH EDWARD HAYDEN THIS WEEK: PENNE PASTA WITH CHUNKY SAUSAGES AND TOMATO CREAM SAUCE
Here I have teamed two foods that always seem to be favourites with children – pasta and sausages. If your children don’t like these perennial favourites, feel free to adapt the recipe to their tastes by substituting chicken for the sausages and using onions or peppers instead of the mushrooms.
RECIPE
* 8oz/225g penne pasta
* 6 large butchers’ sausages
* 2 cloves garlic, crushed
* 3floz/75ml soy sauce
* 2 cloves garlic, crushed
* 6-8 medium sized mushrooms, sliced
* 14oz/400g tinned chopped tomatoes
* 3floz/75ml cream
* A little oil, for cooking
To Serve:
* Parmesan cheese (optional)
* Fresh rocket
METHOD
*Bring a large saucepan of water to the boil and cook the pasta according to the packet instructions.
* While the pasta is cooking, cut each sausage into three pieces. Then choose a large, wide-based sauté pan, heat a little oil, add the sausages and cook on a medium heat until they are browned all over.
* Next add the garlic and mushrooms and continue to cook for 2-3 minutes, until they begin to soften.
* Pour in the chopped tomatoes and cream and allow the mixture to come to the boil. Reduce the heat and simmer for 4-5 minutes.
*Drain the pasta and add it into the tomato-based sauce and mix well.
* Serve immediately in large bowls with some grated parmesan cheese and a little fresh rocket.
