WITH EDWARD HAYDEN THIS WEEK: PENNE PASTA WITH CHUNKY SAUSAGES AND TOMATO CREAM SAUCE

Here I have teamed two foods that always seem to be favourites with children – pasta and sausages. If your children don’t like these perennial favourites, feel free to adapt the recipe to their tastes by substituti­ng chicken for the sausages and using onions or peppers instead of the mushrooms.

RECIPE

* 8oz/225g penne pasta

* 6 large butchers’ sausages

* 2 cloves garlic, crushed

* 3floz/75ml soy sauce

* 2 cloves garlic, crushed

* 6-8 medium sized mushrooms, sliced

* 14oz/400g tinned chopped tomatoes

* 3floz/75ml cream

* A little oil, for cooking

To Serve:

* Parmesan cheese (optional)

* Fresh rocket

METHOD

*Bring a large saucepan of water to the boil and cook the pasta according to the packet instructio­ns.

* While the pasta is cooking, cut each sausage into three pieces. Then choose a large, wide-based sauté pan, heat a little oil, add the sausages and cook on a medium heat until they are browned all over.

* Next add the garlic and mushrooms and continue to cook for 2-3 minutes, until they begin to soften.

* Pour in the chopped tomatoes and cream and allow the mixture to come to the boil. Reduce the heat and simmer for 4-5 minutes.

*Drain the pasta and add it into the tomato-based sauce and mix well.

* Serve immediatel­y in large bowls with some grated parmesan cheese and a little fresh rocket.
