A new experience in fine dining

GOOSE Restaurant and Wine Bar located in Ardee offers a new experience in fine dining in Co. Louth with dinner served Wednesday to Saturday from 5.30pm to 10pm in the restaurant which can comfortabl­y cater for 40 people. The emphasis is on providing a diverse fine dining menu using expertly chosen local produce including fish, steak, duck, pork and vegetables.

From August 8th lunch will be served Tuesday to Saturday from 12 midday to 3pm again offering a unique menu which can be served promptly to the diners preference. Sunday lunch continues as usual 12 midday -5pm.

The Wine Bar provides top quality wines from some of the finest vineyards in the world and will be accompanie­d by a delicious “Light Bites” menu if you are feeling peckish. It is also the ideal environmen­t to meet for a coffee, chat and snack if you are not tempted by the wine.

The proprietor Peter Clifford who is head chef has an excellent tradition in the restaurant business as he is the son of renowned Michelin star chef Michael Clifford and he spent many happy hours in the kitchen gaining expertise under the accomplish­ed eye of his father. Shortly after the sudden demise of his Dad, Peter went on to win the Tesco “Young Chef of the Year”. “It is all I have ever done and known” is a direct quote from Peter to acknowledg­e his family legacy and commitment to the restaurant business. He regularly contribute­s articles and recipes to national papers and magazines while also having written the best selling cookery book “Clifford & Son”.

Peter selected Ardee as the ideal location for his new restaurant as he has strong family connection­s to the locality and his mother Deirdre still has many connection­s in the area.

Brendan Woods, formerly head chef in The Glyde Inn, Annagassan, who set up the dining options of the very successful Market Bar, Dundalk with Peter, has joined forces with him again, this time as Restaurant Manager. He brings a wealth of experience to the role having trained in Dylan McGrath’s Restaurant and helped as head chef to establish the Food House in Carlingfor­d.

Another crucial member of the team in Goose is Peter’s partner Helen, who has worked by his side as a chef over the past 5 years and who shares his vision for a different style of restaurant in Co. Louth.

To officially launch Goose Restaurant & Wine Bar on the Bank Holiday weekend there is a special event on Saturday 5th August of a Prosecco Reception with wine tasting and canapés followed by an exquisite 6 course tasting menu and live music afterwards in the Wine Bar. On Sunday 6th August from 2pm – 5pm there is an Open Day Event for families, to give people an opportunit­y to sample what the menu has to offer. There will be compliment­ary finger food and entertainm­ent for children. So come along and join in to celebrate the launch.
