Oat crunchies

Makes 40

125g but­ter

40ml golden syrup ½tsp bak­ing soda

20ml boil­ing wa­ter

100g por­ridge oat­flakes 150g plain flour

225g sugar

70g co­conut

1 Pre­heat the oven to 160°C/gas mark 2½.

2 Melt the but­ter and golden syrup. Dis­solve the bak­ing soda in the boil­ing wa­ter and add to the but­ter mix­ture. Re­move from the heat and stir in the oats, plain flour, sugar and co­conut.

3 Drop tea­spoon­fuls of the mix­ture onto a greased bak­ing sheet and bake for about 20 min­utes.
