Cherry Chocolate Muffins

MAKES 12 MUFFINS

250g flour

50g ground almonds

2½ tsp baking powder

½ tsp bicarbonat­e of soda

110g Homecook Wonderbar dark chocolate, broken into chunks 1 egg

140g demerara sugar

80ml vegetable oil

250g natural yoghurt

1 tin of cherries (no stones)

Few drops of almond essence Flaked almonds 1 Preheat the oven to 180˚C/160˚C fan/gas mark 4.

2 Mix the flour, ground almonds, baking powder, soda and chocolate chunks together in a bowl.

3 In a second bowl, mix together the egg, sugar, vegetable oil, yoghurt, cherries and the almond essence.

4 Combine the ingredient­s of both bowls together.

5 Place the mixture into a muffin tin lined with cases.

6 Sprinkle with flaked almonds.

7 Bake for two minutes, then reduce the temperatur­e to 160˚C/140˚C fan/gas mark 3 and cook for a further 18 minutes.

8 Allow to cool in the muffin tray before serving.
