Chocolate Malt Sundae
SERVES 8
1 tub vanilla ice cream, softened
85g malt powder
Large handful of Maltesers, crushed, plus extra for decoration
4 shop-bought brownies, cut into quarters
For the chocolate sauce:
400g sweetened condensed milk
60g good-quality milk chocolate, coarsely chopped 60g good-quality dark chocolate, coarsely chopped 180ml double cream
1 Combine the ice cream, malted powder and crushed Maltesers and mix until well blended. Transfer to an air-tight container and freeze for at least four hours, or overnight, until firm.
2 To make the chocolate sauce, combine all the ingredients in a small saucepan. Heat gently, stirring constantly, until the chocolate is completely melted and the sauce is smooth. Allow to cool slightly before serving. 3 To assemble the sundaes, divide half of the ice cream into the serving dishes, top with a layer of brownies, then another ice cream layer. Finish with some extra brownies, drizzle with some of the chocolate sauce and decorate with more Maltesers.
