Garlic Chilli Prawns
SERVES 4 (as a starter)
2 tbsp vegetable oil
60g butter
8 garlic cloves, finely chopped 2 small red chillies, deseeded and finely chopped 20 uncooked king prawns, peeled and deveined, with tails intact
To serve:
A handful of fresh parsley, chopped
Crusty bread 1 Heat the oil and butter in a large, deep frying pan over a high heat. Once the butter has melted, but is not smoking, add the garlic, chillies and prawns. Cook for 3-4 minutes, stirring regularly, until the prawns turn pink. Take care not to overcook the prawns as they will become chewy and tough.
2 Transfer the prawns into individual serving dishes and drizzle with some of the garlic butter. Sprinkle with the parsley and serve with crusty bread.
